On the create screen choose Nextcloud instead of a bare OS. The list only offers apps the plan has room for.

The server installs it
Nextcloud runs in Docker on the server. The install finishes a few minutes after first boot.

Sign in
Open the address on your server's page in the dashboard and sign in as admin with the password shown there.

Yes. The server is a normal VM with full root access. Nextcloud is a head start, not a lock-in.
Who keeps Nextcloud updated?
You do: Nextcloud runs on your own server, so you update it the way Nextcloud recommends, when it suits you. The AI agent on the server can run the update for you from chat.
